Who knew you could make a creamy, rich mayonnaise with just a few plant-based ingredients? This recipe is a game-changer, using soy milk and corn oil as a base. With a squeeze of lemon and a dash of mushroom seasoning, the mayo is bursting with umami and a tangy flavour that’s spot-on. Plus, since it’s homemade, you can be sure it’s fresh and free of unwanted additives. Perfect for everything from dipping fries to spreading on sandwiches.

Preparation time: 5 minutes
Serves 3–6

Ingredients

1 cup soy milk (Vsoy)
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon mushroom seasoning powder
Squeeze of lemon
1 cup corn oil

Method

  1. Put the following ingredients into a blender: soy milk, garlic powder, salt, seasoning powder, and lemon juice. Add a little corn oil.
  2. Pour in the rest of the corn oil gradually while blending until the mixture thickens and reaches a mayonnaise-like texture.
  3. Serve with your favourite dishes.
