This sambal is a must-try for all pedas lovers out there! Made with a base of fried veg anchovies, bird’s eye chillies, and onions, this sambal is mashed the traditional way using a stone mortar, or lesung batu, giving it a unique texture. It’s an explosion of spicy, savoury, and umami flavours, perfect for pairing with a simple plate of rice or as a crunchy condiment for any meal. The preparation is straightforward, so you can have this fiery sambal ready to serve in no time!

Cooking time: 5 minutes
Serves 3

Ingredients
250 g veg anchovies
1 onion, thinly sliced
20 bird’s eye chillies
Salt, to taste
Groundnut oil or cooking oil

Method

1. Fry the veg anchovies, onion, and chillies. Set aside.

2. Prepare a stone mortar, and put all the fried ingredients into it with a little salt. Mash until smooth.
